Cauliflower Rice

So its the next big healthy food, no bad think especially if it helps to get more of this great vegetable down our throats (including the kids).


1 head of Cauliflower

1 Tablespoon of Olive Oil

1 Tablespoon Granulated garlic

Salt and Pepper

Preheat oven to 400 degrees

Break up the cauliflower and place into the blender, or if you don’t have then roughly chop up.

Fill the blender and pulse until no large pieces of cauliflower are left.

Pour the cauliflower into a strainer to drain the water

Spread the cauliflower on greaseproof paper drizzle with the oil and sprinkle the garlic, salt and pepper over all the mixture (should look a bit like couscous)

mix it up a bit then bake for 15 – 20minutes

Remove from the oven and enjoy with your Choice of protein 🙂
