Super Healthy Treats

I am always on the lookout for super healthy treats that don’t make me feel guilty as I have a sweet tooth. I discovered a great recipe book by Jenna Zoe called Super Healthy Snacks and Treats. What you have is great tasting super healthy snacks and she has managed to produce these by swapping refined sugar with natural sweeteners such as agave syrup and maple syrup. See below for a couple of recipes that I have tried and tested.

Super Healthy Treats – Coconut and Spirulina Energy Bites

90g/ ½ cup dates, stonedIMG_1576

65g/ ½ cup cashews

1 large teaspoon cocounut oil

1 ½ -2 teaspoons spirulina powder

1 large teaspoon match powder (green tea powder)

20g/ ¼ cup unsweetened desiccated coconut

1 small cup half filled with water


Soak the dates in a bowl of water for 30mins, but no longer than that

Put the cashews in a food processor fitted with an “s” blade and pulse for 30-45 secs until a thick meal has formed

Rinse the dates wipe off any excess water and add them to the food processor along with the coconut oil, spirulina and matcha powder.  Process until a large ball starts to form.

Remove the blade and the take the processor bowl off the stand

Using the prepared cup of water to wet your hands as you go, pinch off pieces of the mixture about the size of a whole walnut.  Roll them into balls between the palms of your hands (damp hands will stop the mixture sticking too much)

Roll each ball in the desiccated coconut to coat it evenly then place on a plate or board.

Refrigerate the energy bites for at least 20mins. Store in the fridge in an airtight container for up to 3 weeks.


Super Healthy Treats – Energy Bites

Sports Bites

50g/ ½ cup raw almonds

60g/ ½ cup dried apricots (preferably unsulfured)IMG_1577

2 tablespoons shelled hemp seeds

1 ½ teaspoons coconut oil

Vanilla extract


Put the almonds in a food processor fitted with an “S”blade and pulse until crumbly.  Add the apricots and process until well incorporated and the mixture starts to come together into a paste.  Add the hemps seeds and coconut oil plus vanilla extract to taste.

Divide the mixture into 8 and roll the portion into a ball between the palms of your hands.

Freeze the sports bites for at least 15 mins, store in the fridge in an airtight container for up to 3 weeks.
